Bavarian Apple Cheesecake

1/3, 1/2, 1/3 cup sugar

1/3 cup melted butter

1  t shortening

2  8 oz pkgs cream cheese

1/4, 1/2 t vanilla

1 cup flour

1/8 t salt

2 eggs

4 cups peeled, cored apples

3/4 cup chopped pecans

1 t cinnamon

1/4 cup sliced almonds

 

In a medium mixing bowl beat 1/3 c sugar, butter, shortening and 1/4 t vanilla on medium speed until combined.  Stir in flour and salt till crumbly. Pat into the bottom of a 9 inch springform pan. Set aside.  Place apple slices in a single layer in a shallow baking pan. Cover with foil and bake in 400 oven for 15 minutes.  Meanwhile, for filling, in large mixing bowl beat the cream cheese, 1/2 cup sugar and 1/2 teaspoon vanilla with mixer on medium to high till fluffy.  Add the eggs, beat on low till combined.  Pour into pastry lined pan.  Arrange warm apple slices over filling. Combine remaining 1/3 cup sugar and cinnamon.  Sprinkle filling with sugar mixture and almonds. Bake at 375 for about 35 minutes or center is nearly set.  Cool for 30 minutes then remove from pan. Cover & chill.  Serves 12.

Apple Cobbler

6 cups fresh fruit(apples, peaches, blueberries) 

1/2 stick butter

1 cup sugar

3/4 cup flour 

3/4 cup milk

 

Melt butter in a 2 quart oblong baking dish.  Add Fruit. If apples are used, use 1 1/2 cups sugar.  Mix sugar, flour and milk and pour over fruit. (Extra: sprinkle sugared cinnamon and pecans before cooking)Bake at 300 for 1 1/2 hours. Serves 8. 

Spiked Apple Cider

12 whole cloves, 6 whole allspice, 3 cinnamon sticks 

2 quarts apple cider

1 cup orange juice

1 cup cranberry juice cocktail

1 cup pineapple juice

1/2 cup dark rum (optional)

1/2 cup apple brandy

Put the first 4 ingredients in a cheesecloth bag; combine spice bag and cider in a large saucepan. Boil mixture and reduce to medium heat; cook for 35 minutes. Discard spice bag; stir in remaining ingredients. Simmer until heated.

Ozark Pudding

3/4 cup sugar

1 egg

1/2 cup flour

1/4 t salt

11/4 t baking powder

1/2 c chopped nuts

1/2 c chopped apple

1/4 t vanilla

 

Beat egg and sugar. Stir in flour, salt and baking powder.  Add nuts, apple and vanilla.  bake at 350 or 35 minutes in 8 inch square pan.  Top with whipped cream.  Serves 6.

Apple Appetizer

4 cups arugula

12 slices prosciutto cut in 1/2 lengthwise

3 apples cut into 8 wedges

1 t olive oil

1/8 t sugar

12 whole cloves,

6 whole allspice,

3 cinnamon sticks 



Arrange 4 arugula leaves at end of prosciutto strip.  Place an apple wedge on top of arugula and roll up. Place bundle seam side down on serving plate. 

Apple Cheddar Turkey Panini

2 apples thinly sliced

8 slices whole wheat bread

8 sliced cheddar cheese

8 thin slices deli roaster turkey

2 T honey mustard

 

Preheat the panini press or grill.  Spread honey mustard over each slice of bread.  Layer apple slices, cheese and turkey over 4 slices.  Top each with the remaining bread slices.  Coat the press with cooking spray. Grill each sandwich 3 to 5 minutes.  Remove from pan;  cut in half.  Serves 4. Serve with a green salad for a quick and healthy lunch or dinner.



Easy Apple Breakfast

1 T melted butter

4 apples cored, peeled and sliced

2 cups low fat granola

 

Mix everything together and place in a crock pot.  Cook on low overnight and wake up to the wonderful smell of cinnamon and apples.  Serves 4.

 

White Strawberry Sangria

1 bottle dry white wine          1 bottle sweet apple wine

1/2 c strawberry schnapps      1/2c strawberry schnapps

1/4 c sugar

2 c sliced fresh strawberries   2 c sliced strawberries

ice cubes                                  ice cubes

 



In a pitcher, stir together wine, snapps, (sugar if using BHG recipe) until dissolved. Add straawberries. Chill 2 hours. Serve in glasses over ice.

 

 

Apple Raisin Bars

2 c all purpose flour 

2 t baking powder

1 1/2 t cinnamon

1/2 t salt, 1 t vanilla extract

2 eggs

1 3/4 c packed brown sugar

1 stick butter softened

3/4 c raisins

1 1/2 cup diced yellow delicious apples

Coat a 13x9x2 pan with cooking spray; set aside. In a medium bowl wisk together flour, baking powder, cinnamon and salt; set aside.  In a large bowl with mixer on medium, blend sugar, eggs, butter and vanilla for 3 minutes or until smooth.  Reduce speed and gradually add flour mixture.  Mix for 2 minutes.  Stir in apples and raisin and spread in prepared pan.  Bake at 350 for 35 minutes.  Cool completely before cuting into bars.
